Meal Plan for the Week

It’s been almost a month since I’ve really sat down and planned our meals for the week.  I know our week nights go so much more smoothly when I take the time to plan ahead, but sometimes I’d rather just watch T.V. or read a good book when I have downtime from work or my toddler.

Seeing soups and stews all over Pinterest this week has me excited about getting back in the game again, so here’s what we’ll be eating this week:

Monday: Beef Stew

Tuesday: Grilled Garlic Dijon Herb Salmon and Roasted Vegetable Couscous

Wednesday: Beef Stew Leftovers

Thursday: Pork Chops, Easy No-Peel Homemade Applesauce, and Autumn Salad with Pears

Friday: Dinner Out

Things you can prep on Sunday:

  • Prepare beef stew from start to finish in crock pot and store.  Also consider doubling the recipe and freezing for another week or giving to a family with a new baby.
  • Prepare applesauce from start to finish and freeze half for another week.
  • Make garlic Dijon herb paste for salmon recipe.
  • Make roasted vegetable couscous from start to finish and store in the refrigerator.  This will taste even better with more time for all of the flavors to blend.
