Meal Plan for the Week

My daugher turned two on Saturday, so I have a fun birthday party post in the works.  Stay tuned!  Here’s what we’ll be eating this week:

Monday- Bobby Dean’s Slow-Cooked North Carolina-Style Pulled Pork with Store-Bought Potato Salad and Slaw

Tuesday- LIghter Beef Tacos

Wednesday- Barbecue Leftovers

Thursday- Zoodles with Spinach Turkey Meatballs and Store-Bought Fra Diavolo Sauce (The Simply Enjoy brand at Martin’s is my favorite.)

Friday- Eat Out or Take-Out

I’m going to make the zoodles with a julienne peeler for now.  If they are a huge hit with the husband (not holding my breath) and my toddler, I may eventually go ahead and invest in a spiral slicer which looks amazing!  My cabinet space is limited, so I need to make sure we enjoy zoodles before I buy another kitchen gadget.

Things you can prep on Sunday:

  • Prepare pulled pork recipe from start to finish–I had plenty to freeze half for another week.
  • Prepare beef taco filling and chop lettuce and tomato.
  • Prepare the meatballs.
