I was running out of ideas for meals for the week, but a dear friend stepped in with some awesome suggestions!  Enjoy!

Monday- Vegetable Enchiladas

Tuesday- Seared Scallops with Brussel Sprouts and Bacon

Wednesday- Leftovers

Thursday- Grilled Chicken, Bell Pepper, Zucchini and Squash Vegetable Kebabs with a Greek salad

Friday- Roasted Vegetable Israeli Couscous (made with leftovers from Thursday’s kebabs)
